Aloha Everyone,
Paella is a single skillet or one pot rice dish mainly affiliated with the Andalucia region of Spain. Quality of rice and its preparation separates ho-hum versions from those that are outstanding.Our friend Joy is a creative cook and excels in preparing international dishes. One of her businesses, catering for small private parties, takes her exploring around “hidden” treasures of Makati and we are the lucky beneficiaries.
Our lunch at Terry’s Bistro began with 4 selections of tapas. J.J.’s favorites were gambas and chireta. The three of us feasted on the house specialty of Paella. We last saw each other just 5 days ago, but there is always so much to share and learn. We picked up from our previous conversation on books, arts plus travel, always peppered with geopolitical issues and how to navigate this challenging, chaotic but wonderful world.
