Aloha Everyone,
Spaghetti Squash is a winter fruit introduced to us via last week’s Farmer’s basket box. Following an online recipe, my daughter-in-law first halved the fruits, then baked it. When I offered to help, she asked me to fork out the meat. As you can see, true to its descriptive name, the meat came out like spaghetti noodles.
She then stir fried the Spaghetti Squash with onion, served with fresh grated Parmesan cheese. The result was an unexpectedly flavorful vegetable dish.
Spaghetti Squash is low in calories, high in fiber, vitamin C, Vitamin B-6 and manganese. High in antioxidants and delicious nutty flavor, we all agreed that Spaghetti Squash will be our top choice in substituting spaghetti noodles.
