Stopping at Costa Vida for lunch was a real treat. The word "Fresh" in front of Mexican Grill caught my eyes. I was not expecting much so it was a real surprise when J.J. and I saw one of the employees making fresh burrito wrappers.
She would place a pre-measured flour dough on the machine to press. When the wrapper is finished it is placed on a flat grill to cook.
Another employee took our order. Our burritos were assembled then heated in a conveyer oven before fresh ingredients such as tomatoes, lettuce and in my case guacamole were added.
My vegetarian burrito with pinto beans and rice. It was healthy and excellent. Notice the two little beans on top to signify that it is vegetarian.

Our total bill came out to $15.86.
Will, the restaurant manager told us that the franchise originated in Utah. J.J. and I will definitely try another Costa Vida. Hopefully there will be a restaurant in Hawaii soon.
We are spending one night at KOA Springville /Provo.
